Here are some easy quick recipes suitable for lunch /tea
Goat’s cheese and red onion marmalade pancakes
Ingredients
Readymade unsweetened pancakes or Staffordshire oat cakes
Red onion preserve
Soft Goats cheese or similar
Baby leaf spinach
Warm a pancake (see suggested method on the packet)
Warm a tablespoon per pancake of the Red onion marmalade
Slice the Goats cheese
Wash the spinach and dry thoroughly.
Lay the pancake on a warm plate
spread the onion marmalade over half of the pancake
next lay the cheese over the pancake half
finally put a good layer of spinach and fold over the pancake.
Tomato bread
Ingredients
Per portion one to two slices of bloomer loaf
One clove of garlic
1-2 table spoons of olive oil
One medium sized ripe tomato (diced with or without the skin)
Basil (dried or fresh)
Optional mozzarella cheese sliced
Lightly toast the bread
Mix the crushed garlic clove with the olive oil (the whole amount or depends on your taste)
Spread the olive oil mixture over the bread
Place the tomato over the bread evenly and garnish with the basil
OPTIONS
This can also be served as a mini pizza by adding the mozzarella and toasting lightly again
OR
Just add the cheese and eat uncooked, lovely on a hot day.
